Microgreen Nutritional Information
Why are microgreens so nutritious? Microgreens are simply the immature seedlings of edible plants such as vegetables and herbs. Microgreens are approximately two inches long, include the stem and the first two sets of leaves, and they are harvested at just 7 to 14 days after germination. The result is a tiny, tender, flavor-packed green that is surprisingly high in nutrients. Qin Wang, a University of Maryland expert who has researched microgreens extensively, explains the high nutrient content of microgreens:
“Because microgreens are harvested right after germination, all the nutrients they need to grow are there,” says Wang. “If they are harvested at the right time they are very concentrated with nutrients, and the flavor and texture is also good.”
In other words, the tiny plant is concentrated with the nutrients it needs to grow and mature. If we harvest the plant before it matures, it hasn’t used up those nutrients yet, so the nutrients remain available for our consumption.
In addition, there is some evidence that the nutrients in microgreens may be more easily digested and absorbed by the body. A 2011 study published by “Nutrition and Cancer” showed that people absorbed far more sulforophane (a potentially anticancer and antidiabetic compound) from broccoli sprouts than from mature broccoli. What vitamins and nutrients do microgreens contain? Microgreens have been shown to have high levels of vitamin C, vitamin K, vitamin E, lutein, and beta-carotene. These are all important antioxidants that help support the proper functioning of the body when it comes to skin, eye, and bone health, cancer and heart disease prevention, longevity, and more. Although not every variety of microgreens has been tested, it is safe to assume that most microgreens contain many of the same nutrients as their mature counterparts, if not more! How do I choose the best microgreens?
Choose the right variety:Researchers found that vitamin C, vitamin K, and vitamin E levels were highest in red cabbage, garnet amaranth, and green daikon radish microgreens. Red cabbage microgreens have an astonishing 69 times more vitamin K than mature red cabbage! Broccoli sprouts are high in vitamin K and sulphoraphane, and cilantro has surprising levels of beta-carotene.
However, it’s best to choose whatever microgreens appeal to you! Each variety of microgreen has its own health benefits to offer. There is no “wrong” type of microgreen! If you love spicy, peppery greens like radishes and arugula, try our bold miKrogreen Spicy Mix. If a milder flavor suits you better, try something like our miKrogreen Salad mix, which contains milder broocoli, kale, and kohlrabi. Live Mustard is always a hit with mustard lovers. Try different varieties until you find what you love!
Look at the color: As a rule of thumb, when shopping the produce department, look for the brightest, most intensely-colored greens. Microgreens aren’t strictly green—some types, like radishes, beets, and Swiss chard have stems or leaves that are deep red, purple, hot pink, or yellow! Our Nutricolor Micro Mix is a great example of the variety of color available. This doesn’t mean that plain old green ones are of any less value—just make sure they have an intense emerald hue. Intense color is not only beautiful, but is also an indicator of freshness and nutritional value.
Eat them raw: To preserve both the flavor and the nutritional value of your microgreens, eat them raw. Cooking them may compromise the nutrients, and also may reduce the flavor and ruin the crunchy texture. Microgreens are wonderful when used as a garnish on soup, sandwiches, or seafood, or as a delicious salad. You can even sprinkle them in a smoothie or add them into a stir fry at the end of cooking. Our personal favorite— a sprinkle of raw mustard greens on your hamburger is a highly nutritious alternative to yellow mustard!
Include fats and oils in your diet: Another way to boost the nutritional value of your greens is to include extra-virgin olive oil, or another healthy oil, as part of your meal. Many of the important nutrients in microgreens, like vitamins E and K and carotenoids, are fat-soluble, which means that your body can absorb them better in the presence of fats and oils.
Eat them right away: Fresh fruits and veggies, especially tender ones like microgreens, tend to lose nutritional value by the day. Eat them as soon as possible to prevent losing these valuable vitamins!
